Meatless Monday: Gluten-Free Pasta

I’m a lucky, lucky girl. Partially because I got to attend the Natural Products Expo East in Baltimore last week, and see all of the interesting products on, or heading to, the shelves right now. But at the show, I also realized I’m lucky because I don’t have any food allergies (*knock wood*).

The show was filled with gluten-free food (also raw, vegan, and vegetarian, although those are food choices, and will be covered in more upcoming blogs on Expo East). There are a few people around the office who have to eat gf (gluten-free), and it’s also a huge movement in the healthy eating world right now to be gf by choice. So today, my Meatless Monday recipe is also going gf, with the help of some Lundberg Family Farms Organic Brown Rice Pasta that was gifted to me. Side note here: I will always say when products have been gifted, and I will never recommend a gifted product that I don’t love. I would hate to keep a great organic product away from you guys just because it was gifted. Side note over.

I also used this amazing Himalayan Sea Salt that I got at the show. Specialty sea salt is another big trend you should keep your eye on, it makes a great gift and really magnifies the  flavors of a dish beautifully.

Gluten-free Spinach and Feta Pasta

The gluten-free pasta was actually really good, and the large amount of spinach adds substance to this meat-free recipe. Each ingredient is a great protein source, so your body won’t even know the meat (and gluten!) is gone.

8 oz dry, gluten-free pasta

2 tablespoons olive oil

1lb baby spinach or 10 oz bag frozen spinach, chopped

2 tablespoons pine nuts

4 cloves garlic, minced

1 cup feta cheese

2 teaspoons Himalayan sea salt, or to taste

1. Cook pasta according to package directions. Be sure to stir thoroughly so the pasta doesn’t stick together

2. Heat olive oil in a saute pan over medium heat. Add garlic, pine nuts, and spinach. Saute until the spinach is wilted or thawed.

3. Drain pasta and rinse well, return to pot.

4. Add spinach mixture to pasta.

5. Add feta cheese to pasta and stir until feta is warm.

6. Season to taste with sea salt, then serve and enjoy!
