Cherry Basil Splash

IMG_7265Here’s a fresh summer cocktail that celebrates delicious, tart cherries. This kind of drink is made to be sipped on the back porch on a hot summer’s day. The ice slowly melts into the gin and cherries, slightly diluting their strong flavors to create a refreshing post-weeding treat.

Cherry Basil Splash

5 Basil leaves
5 Cherries, halved and pitted
1 1/2 ounces Gin
1 ounce St. Germain
Club soda

Muddle basil and cherries in a glass, until the cherries are just crushed and losing their shape. Add gin and St. Germain, and stir to combine. Top with club soda (1/4 –1/2 cup, to taste), then fill the glass with ice. To make without alcohol – just use the club soda, and add a little ginger ale or honey for sweetness.

    I have really been getting into seasonal cocktails, lately! My mint’s just exploding so much that I really love any excuse to use it. Would you happen to have a good Moscow Mule or Gin Gin Mule recipe? Or anything using mint, for that matter? :)
